RECIPE FOR 2 – PITA PIZZA

 

With the weather being so cold D and I spend more time indoors. We end up using this extra time in the apartment to catch up on tv shows we might have missed during the summer or revisiting series we just love to watch. Recently, I decided to step up our food game during these streaming marathons and ditch the seamless app. One meal D and I love to make is pita pizzas. You can pretty much create whatever pizza you’re in the mood for but this recipe is one of our usuals I wanted to share for the second Recipes for 2.

– Pita Pizza –

  • 2 pizza pitas
  • 2/3 cups pizza sauce
  • 10oz cheddar cheese
  • 1/2 cup quartered and sliced red onion
  • 1/2 cup quartered and sliced green peppers
  • 1/2 cup quartered and sliced plum tomatoes
  • 1/4 cup black olives

Preheat oven to 400 degrees F

-Grate the cheese and set aside

-Quarter and slice the onion, green peppers, and olives, then divide ingredients into two separate bowls

-Place both pitas on a foiled baking sheet and spread a little more than 1/3 cup of pizza sauce on each pita

-Sprinkle half of the cheese on each pita and add the other ingredients on top (if you want, save a little cheese and sprinkle on top during the last 2 mins of baking)

Bake for 8-10 minutes, or until the cheese has melted and starts to bubble

*I use a pita that is marketed as a pita bread for pizzas but any pita bread will do the trick.
